Removes the Tracy profiling example due to linking issues in CI on this PR. Examples should primarily serve new users learning Hyperlight, whereas the Tracy example was only useful for profiling by maintainers. Personally I don't use tracy because flamegraph-based tooling has been sufficient for my profiling needs.
